A short but sweet post this week. I am off on a San Diego adventure for Memorial Day weekend, and I’m so stoked! I am in some serious need of r&r. Last week, I got a few questions about one of my weeknight meals I posted on Instagram, so I wanted to post the recipe for you guys. This chicken dish is a very quick, easy, and healthy dish that you can whip up in 30 minutes or less which makes for the perfect weeknight dinner.
The dish has chicken marinated in paprika, thyme, and chicken bouillon served with instant rice and fresh tomatoes. You can use any cut of chicken. I like to use the thighs because they have the most flavor, but I have made this with chicken breast before. Herbs are my favorite ingredient to use in any dish. I think I have about 30 different spices and counting. They are a great way to add flavor to a meal without adding any fat. In this particular dish, I loved how the smokiness of the paprika complemented the earthiness of the thyme and the sweetness of the chicken bouillon. It made for a very balanced flavor combination. 🙂
To round out the dish, I prepared some instant rice, fresh tomatoes, and lime juice. This orzo and rice pilaf mixture from Trader Joe’s is my go to when I need to add a grain to my meals. I can make it in 20 minutes or less, and it is so so so good! I would highly recommend it to anyone short on time.
Paprika ChickenPrint Recipe
- 2 pounds chicken
- 4 teaspoons chicken bouillon powder
- 2 teaspoon dried thyme
- 1 teaspoon paprika
- 2 teaspoon salt
- 1 teaspoon pepper
- 3 cloves of garlic
- 1 lime
Cut the chicken up into bit-size pieces. Pour all the spices over chicken and let it marinate for 5 minutes
Put some oil in a pan over medium high heat. Add in the garlic and cook for a minute or until garlic is translucent.
Add in the chicken and cook for 4 minutes or until the chicken is done. Remove the chicken from the heat.
Squeeze lime juice over the chicken for that extra kick 🙂
