I can’t believe we are less than a week away from Christmas. What are you guys doing for the holidays? I am heading over to my grandparents place in Michigan. My mom has a HUGE family there (she’s one of 8), and I love getting the chance to visit them. Especially during this time of year. My relatives tell me there are mountains of snow right now which gets me feeling all giddy inside. There’s just something about a white Christmas that makes it so magical. I honestly can’t wait!
At this time of year, I start to check out a bit and get into holiday mode. That means I get really lazy, so I turn to a fool proof method of cooking that takes little to no time and effort – roasting. Roasting is probably one of my favorites because you can create yummy, healthy recipes in very little time. I can also just pop food in the oven and forget about it until its done.
A good roast depends on great spices which reduces the amount of fat (ie. butter and oil) I need to add to the dish. One of my friends got me this amazing spice mix as a gift from her trip to Amsterdam. I love it when I get stuff I can’t find here in the States as it creates unique flavors I’ve never had before. This spice mix comes from a brand called Euroma which is a Dutch spice brand. From what I can tell, it looks like it has a lot of cumin, cloves, nutmeg, and some dried basil in it. I added this spice mix to the meat, veggies, and potatoes with salt, pepper, and olive oil. I then popped them in the oven for 20 minutes at 450 degrees F and it was done! This dish makes for an amazing weeknight meal or a quick Sunday supper.
Roasted Chicken with Rainbow Carrots and PotatoesPrint Recipe
- 1 pound chicken
- 6 rainbow carrots
- 5 rainbow potatoes (halved)
- 4 tablespoons olive oil
- 1/4 cup Euroma Hollandse Kruiden spice seasoning
- 1 tablespoon salt
- 1 tablespoon pepper
Preheat the oven to 450 degrees F
Place the chicken, carrots, and potatoes on a baking sheet. Cover with the rest of the ingredients. Ensure that the chicken, carrots, and potatoes are well seasoned on all sides.
Roast for 20 minutes.
