Lomo Saltado

A yummy recipe for my version of lomo saltado that includes beef sirloin, tomatoes, and french fries.

Ingredients

  • ¾ lb beef sirloin cut into strips
  • 1 tsp salt
  • 1 tsp pepper
  • 1 tsp cumin
  • 2 tsp rice wine vinegar
  • 2 tbsp soy sauce
  • ¼ large red onion cut into chunks
  • 2 roma tomatoes cut into 4 pieces
  • 2 cloves garlic minced
  • 1 tbsp aji amarillo paste
  • 1 tsp beef base
  • 10 oz french fries frozen
  • 1 tbsp cilantro minced
  • 1 lemon optional

Instructions

  • Prepare the French fries according to the instructions on the package. Set aside.
  • Combine salt, pepper, cumin, vinegar, and soy sauce in a bowl. Add the beef sirloin strips and marinate for 10 minutes.
  • Heat 1 tablespoon of olive oil over medium high heat. Add the beef sirloin and cook for 2-3 minutes on each side until brown.
  • Add the red onion, tomatoes, aji amarillo paste, beef base, and garlic. Cook for 1-2 minutes until the tomatoes are tender.
  • Add the french fries and cook for ~1 minute.
  • Garnish with cilantro and serve over white rice.
  • Optional: Squeeze some lemon over the lomo saltado before serving.
