Crispy and Tender Ube Waffles

These ube waffles are the perfect combination of crispy, soft, and ube flavor. Filled with ube extract and ube halaya, they will make any breakfast or brunch menu super special. And the best thing is they are easy to make - coming together in just over 20 minutes!

  • Melt 2 tbsp of unsalted butter and add to a bowl.
  • Add ½ cup of granulated sugar, 1 egg, ½ cup of coconut milk, ½ tsp of vanilla extract, ½ tsp of ube extract, and ¼ cup of ube halaya to the bowl. Mix well.
  • In a separate bowl, mix together ¼ tsp of salt, 2 tsp of baking powder, ½ cup of corn starch, ½ cup of all purpose flour, and ¼ cup of sweet rice flour.
  • Combine the wet and dry ingredients. Whisk until well combined.
  • Heat a waffle maker until hot. Pour ⅔ cup of batter into the waffle maker and let it cook for 4-6 minutes. Put the finished waffle onto a plate and repeat the process until there is no more batter. This recipe should yield ~3 waffles.
  • Serve with some fresh fruit and maple syrup. Enjoy!

Notes

I turned my waffle maker up to the highest setting for my waffles. However, every waffle maker is different so I recommend making a test waffle to understand which settings work for you.
