Super Easy Ube Pie with Graham Cracker Crust
If you need an easy dessert that has that "wow" factor, this ube pie is for you. It is made with an addicting graham cracker crust filled with a smooth, ube filling. The best part is this dessert comes together in just 1 hour.

Preheat the oven to 350 degrees F (177 degrees C).
Add 1 ½ cups of graham crackers to a food processor. Pulse until the graham crackers are broken down into crumbs. Empty into a bowl and add 2 tbsp of granulated sugar. Mix until combined. Lastly, add 6 tbsp of melted butter to the bowl, and mix until combined. The mixture should look like wet sand.
Press the graham cracker crust into a 9 inch pie pan. Bake for 8 minutes and set aside.
Empty 1 lb of grated ube into a microwave safe bowl and microwave for 3-4 minutes. Add 1 ½ cups of the cooked ube to a blender. You can also use a food processor.
Add ¾ cup of light brown sugar, 2 eggs, ¼ cup of coconut cream, 4 tbsp of melted unsalted butter, 1 tsp of ground cinnamon, ½ tsp of ube extract, and ¼ tsp of salt to the blender. Blend until smooth.
Pour filling into the graham cracker crust. Bake for 35-40 minutes until a toothpick comes out clean.
Let it set for an hour before serving.
- How to save time on the crust. If you don't want to make the crust from scratch, you can buy a pre-made graham cracker crust from the store. Alternatively, you can also buy graham cracker crumbs from the store. Both will help reduce your baking time.
- Can I reduce the sugar? Yes you can reduce the sugar in the filling and crust. Note that reducing the sugar in the crust will cause it to become more crumbly.
- Substitutes for grated ube. There is no perfect substitute for ube, but a pretty good one is purple sweet potatoes. If using whole purple sweet potatoes, boil them and measure out 1 1/2 cups to use for the filling.
- Can I make this gluten free? Yes you can! Substitute the graham crackers with gluten free graham crackers.
- For the best flavor, make the pie a day ahead and let it sit in the fridge overnight.
- Cover and store it in the fridge for up to 2 days. Personally, I like making this pie a day ahead and leaving it in the fridge overnight. The pie is tastier the next day.
