10-Minute Bánh Mì Ốp La (Fried Egg Banh Mi)
This Banh Mi Op La or Friend Egg Banh Mi is one of my favorite breakfast recipes. It's essentially the Vietnamese version of a fried egg sandwich but filled with all the banh mi fillings we all know and love. This recipe also takes just 10 minutes!

Toast 4 baguettes. If using a long baguette, use 2. Cut each in half without cutting the the baguette all the way through (like with a sub sandwich).
Smear 1 tbsp of pate on one half and 1 tbsp of mayonnaise on the other half. Top with a few slices of cucumber, 1 tbsp of pickled daikon, 1 tbsp of carrots, and 1 tbsp of cilantro. Optional: Add a few pieces of jalapeno for spiciness. Repeat this for all sandwiches.
Fry 8 eggs and distribute them evenly between the 4 sandwiches. Lastly, drizzle 1-2 tsp of soy sauce on top and serve!
