This Banh Mi Op La or Friend Egg Banh Mi is one of my favorite breakfast recipes. It’s essentially the Vietnamese version of a fried egg sandwich but filled with all the banh mi fillings we all know and love. This recipe also takes just 10 minutes!

I think one thing Vietnamese people do right is breakfast. We don’t stick to the traditional Western breakfast of eggs and bacon. We have a far better alternative in the form of noodle soups, banh mi, and special dishes like Bo Ne (Vietnamese steak and eggs). In my opinion, they have better flavor and are way more satisfying. This Bánh Mì Ốp La or Fried Egg Banh Mi is essentially a breakfast sandwich. It has all the fillings we’ve come to know and love (pickled daikon and carrots, Vietnamese pate etc) from traditional banh mi but instead of meat, it is served with fried eggs. I think it’s the perfect mesh of Western and Vietnamese cuisines.

Some deets about key ingredients

  • Pate – I used a traditional Vietnamese pate for my recipe, but feel free to use your favorite pate. If you would like to make this recipe vegan or vegetarian, use mushroom pate.
  • Mayonnaise – I’ve had banh mi with Kewpie mayo and Western mayo, and have come to appreciate Western mayo more. I think Keypie mayo can be too savory, and I like the more neutral flavor of Western mayonnaise when paired with intensely savory flavors like pate. If you would like to make this recipe vegan or vegetarian, use a vegan mayo alternative.

  • Toast 4 baguettes. If using a long baguette, use 2. Cut each in half without cutting the the baguette all the way through (like with a sub sandwich).
  • Smear 1 tbsp of pate on one half and 1 tbsp of mayonnaise on the other half. Top with a few slices of cucumber, 1 tbsp of pickled daikon, 1 tbsp of carrots, and 1 tbsp of cilantro. Optional: Add a few pieces of jalapeno for spiciness. Repeat this for all sandwiches.
  • Fry 8 eggs and distribute them evenly between the 4 sandwiches. Lastly, drizzle 1-2 tsp of soy sauce on top and serve!
