Pandan Coconut Rice Krispie Treats

Prep a 8×8 baking dish by greasing it with oil and covering it with parchment paper.
Mix together 4 ½ cups of Rice Krispie cereal and 1/2 cup of coconut flakes in a large bowl.
Melt ¼ cup of unsalted butter over medium heat, and then add 10 oz of marshmallows.
Once the marshmallows are almost completely melted, add ¼ tsp of pandan extract and a pinch of salt. Mix it all together until it's uniformly green.
Pour the pandan marshmallows onto the Rice Krispie cereal and mix until the cereal is coated in the melted marshmallows.
Scoop the Rice Krispie cereal into the prepped baking dish and press it down, so it is distributed evenly. Cool for 5 minutes before serving.
- If you would like a drier rice krispie treat, feel free to add 1/2 cup more cereal. Similarly, feel free to add as much pandan flavor as you like. I go into the pros and cons in the blog post.
