Pandan Coconut Rice Krispie Treats

Instructions

  • Prep a 8×8 baking dish by greasing it with oil and covering it with parchment paper.
  • Mix together 4 ½ cups of Rice Krispie cereal and 1/2 cup of coconut flakes in a large bowl.
  • Melt ¼ cup of unsalted butter over medium heat, and then add 10 oz of marshmallows.
  • Once the marshmallows are almost completely melted, add ¼ tsp of pandan extract and a pinch of salt. Mix it all together until it's uniformly green.
  • Pour the pandan marshmallows onto the Rice Krispie cereal and mix until the cereal is coated in the melted marshmallows.
  • Scoop the Rice Krispie cereal into the prepped baking dish and press it down, so it is distributed evenly. Cool for 5 minutes before serving.

Notes

  1. If you would like a drier rice krispie treat, feel free to add 1/2 cup more cereal. Similarly, feel free to add as much pandan flavor as you like. I go into the pros and cons in the blog post.
  2. Store bars in an airtight container at room temperature for up to 3 days
