Pandan Coconut Rice Krispie Treats

Rice krispie treats are one of the quickest dessert recipes. Everyone also seems to just love them! So when it came to adding another pandan dessert to my pandan dessert collection, I knew it had to be a pandan coconut rice krispie treat. These rice krispies are flavored with a vanilla-y pistachio-y pandan extract paired with some coconut flakes mixed in for extra texture and flavor.

How I developed these pandan coconut rice krispies
I have made a ton of rice krispie treats over the years and have slowly refined my recipe thanks to feedback from my readers! In my miso rice krispie treat recipe, some made a comment that the bars were too dry, so I kept that in mind for this recipe. I first tested it with 5 cups of cereal and 1 cup of coconut flakes but thought similarly, they were too dry. That’s why I went down to 4 1/2 cups of cereal and 1/2 cup of coconut flakes. The resulting bars were chewier and greener than test #1. However, if you do like a drier bar, feel free to use 1/2 cup more cereal.
I also thought a lot about the amount of pandan extract to use. It can be tough to gauge just how much to use. I try to balance good pandan flavor with the best shade of green. In my pandan cookie recipe, I ended up upping the amount after a few tests for a stronger pandan flavor even though the shade of green was better with less extract. I had the opposite conclusion in my pandan waffle recipe. I tested this one with 1/4 a tsp but thought the bars weren’t green enough. However, I ended up reduce the amount of cereal and coconut flakes which helped improve the color.
Ultimately, how much pandan extract you use is up to you. If you want more pandan flavor and don’t care for how green the dessert is, use as much as you like. If you want a light shade of green and don’t care for a strong pandan flavor, use less pandan. Also, make sure to use Butterfly pandan extract for the best flavor.

Pandan Coconut Rice Krispie Treats
Ingredients
- 4 ½ cups Rice Krispie cereal
- ½ cup coconut flakes
- ¼ tsp pandan extract
- ¼ cup unsalted butter
- 10 oz marshmallows, 6 cups mini marshmallows
- 1 pinch salt

- Prep a 8×8 baking dish by greasing it with oil and covering it with parchment paper.
- Mix together 4 ½ cups of Rice Krispie cereal and 1/2 cup of coconut flakes in a large bowl.
- Melt ¼ cup of unsalted butter over medium heat, and then add 10 oz of marshmallows.
- Once the marshmallows are almost completely melted, add ¼ tsp of pandan extract and a pinch of salt. Mix it all together until it's uniformly green.
- Pour the pandan marshmallows onto the Rice Krispie cereal and mix until the cereal is coated in the melted marshmallows.
- Scoop the Rice Krispie cereal into the prepped baking dish and press it down, so it is distributed evenly. Cool for 5 minutes before serving.
Notes
- If you would like a drier rice krispie treat, feel free to add 1/2 cup more cereal. Similarly, feel free to add as much pandan flavor as you like. I go into the pros and cons in the blog post.
- Store bars in an airtight container at room temperature for up to 3 days
