
It has been a minute since I posted a new recipe, and that’s because I just needed a break. I’ve been feeling creatively burnt out. In addition, I have been taking time to enjoy everything opening up and seeing my friends, so sorry if I post a little more sporadically going forward. This weekend is of course Mother’s Day weekend, so that means you gotta make your mom breakfast! And I have the perfect breakfast for you. These black sesame waffles are earthy, crispy, and not too sweet – 3 things my mom loves. I hope you will choose to make these for your mom because I guarantee she’ll love it!
Ingredients, Substitutions & Adjustments
- Black sesame seeds – Adds the yummy black sesame seed flavor and black color to these waffles. As I mentioned in my black sesame cookie recipe, try to use a spice grinder to break these things down. A food processor works but you won’t get that fine powder you’re looking for. You also can use black sesame powder. Make sure to use a little less (~3 tbsp) if using black sesame powder.
- Unsalted butter – Adds some richness and nuttiness to these waffles.
- Granulated sugar – Sugar adds sweetness and moisture to these waffles.
- Vanilla extract – Adds extra flavor to these waffles. Substitute with 1 vanilla bean or an equal amount of vanilla paste. I personally love using vanilla paste because it has more flavor than vanilla extract.
- Salt for seasoning
- Egg – Adds richness to these waffles.
- Whole milk – Adds moisture to these waffles. You can also use low fat milk.
- All purpose flour – This is the main dry ingredient in these waffles. To make this gluten free, you can also use sweet rice flour. I tested this with sweet rice flour and found those waffles were less crispy than those made with all purpose flour. That’s why I went with AP flour for this recipe.
- Baking powder – Provides lift and airiness to these waffles.
Making my black sesame waffles
These waffles come together really really quickly which is one of the best parts of this recipe! First make your black sesame powder. Toast the black sesame seeds for 20-30 seconds. Add black sesame seeds to a food processor or spice grinder. Pulse until it has broken down into a fine powder. I would highly recommend a spice grinder for the best results. Set aside. Add butter, granulated sugar, vanilla extract, salt, egg, and whole milk to a large bowl. Mix until well incorporated. Add the black sesame seeds, all purpose flour, and baking powder to the mixture and mix until well incorporated. Your batter is done!
Heat up your waffle maker. One of the keys to a crispy waffle is a hot waffle maker. The batter should sizzle once it hits the waffle maker. Add 1/4 cup of the batter to the waffle iron and cook for 3-5 minutes until brown and crispy. One way you can tell the waffle is done is by watching the steam. Once the steam disappears, the waffle should be cooked through. Repeat for the rest of the batter. Serve with butter, maple syrup, and fresh fruit. I personally like strawberries!
Tips on how to make the perfect black sesame waffles
Make sure your waffle maker is HOT
This is so important for crispy waffles. The waffle should sizzle as it hits your waffle maker, and that heat creates the crispy exterior while the center stays soft.
Use an ice cream scoop to scoop batter into the waffle iron
I tried using a measuring cup and an ice cream scoop, and I found an ice cream scoop to be so much more efficient. I used a medium ice cream scoop which is 2-3 tbsp which is a little less than 1/4 cup but it works!
How can you tell your waffle is done?
When your waffle is cooking, it will release steam. Once the steam stops coming off the waffle maker, you know the waffle is done.
