I’m writing this recipe for cinnamon coriander bbq ribs because my mom keeps asking me for it. I originally created this recipe for a collaboration with Spice Tribe. (Sidebar, I highly recommend their spices and just the brand in general.) My mom loved this recipe so much, she’s asked me to recreate it 3 times since I posted it on Instagram a few months ago. That’s why I thought hey why not write a full blog post about it. This blog post also includes tips on how you can use your own spices instead of getting them from Spice Tribe.

Ingredients, Substitutions & Adjustments

  • Rack of ribs
  • Coriander seeds – Any kind of coriander should work for this recipe. I used Spice Tribe’s Oasis Coriander Seeds which has a very unique flavor. Since you will be breaking down the seeds into powder form, you can skip that step by buying ground coriander.
  • Ground nutmeg – Adds a little extra flavor to the spice mixture. I used Spice Tribe’s Island Nutmeg for this recipe, but you use whatever nutmeg you can find.
  • Ground cinnamon – I think cinnamon with pork is the best kept secret of cooking. Cinnamon makes pork taste so good. I used Spice Tribe’s Padang Cassia Cinnamon which has become my favorite kind of cinnamon. Use any kind of cinnamon you can find.
  • Light brown sugar – Adds a touch of sweetness to the spice blend.
  • Salt for seasoning
  • BBQ sauce – Use your favorite BBQ sauce for that pretty glaze on top of the ribs. I just chose a random one at the market, so really anything goes for this ingredient.

Making my cinnamon coriander bbq ribs

First, use a spice grinder to break down the coriander seeds. Add to a small bowl. Add the nutmeg, cinnamon, salt, and light brown sugar to the bowl and mix. Coat the ribs evenly with the spice rub. Make sure to remove the thin membrane from the underside of the ribs before you add the rub. Here is a great video on how to do it. Marinate the ribs for at least 1 hour. Do this overnight for the best flavor.

Preheat the oven to 275 degrees F. After marinating, put the ribs on a baking sheet. Cover the ribs and bake for 2.5 hours. Take the ribs out. Increase the oven temperature to a low broil (~450 degrees F). Brush an even layer of barbecue sauce on the ribs and let it bake for another 20-30 minutes to solidify the glaze. Brush on another layer of barbecue sauce before serving.

Ingredients
 
 

  • 1 rack ribs

  • ½ tsp ground nutmeg
  • 2 tsp ground cinnamon
  • 4 tsp light brown sugar
  • 4 tsp salt
  • ⅔ cup BBQ sauce store bought

Instructions
 

  • Use a spice grinder to break down the coriander seeds. Add to a small bowl.
  • Add the nutmeg, cinnamon, salt, and light brown sugar to the bowl and mix.
  • Coat the ribs evenly with the spice rub. Make sure to remove the membrane from the underside of the ribs before you add the rub. This is a great video on how to do it.
  • Marinate the ribs for at least 1 hour. Do this overnight for the best flavor.
  • Preheat the oven to 275 degrees F.
  • After marinating, put the ribs on a baking sheet. Cover the ribs with aluminum foil and bake for 2.5 hours. I covered the ribs with aluminum foil so the heat and steam could cook the ribs without drying it out. You can either wrap the ribs or cover the entire length of the baking sheet with foil.
  • Take the ribs out. Increase the oven temperature to a low broil (~450 degrees F).
  • Brush an even layer of barbecue sauce on the ribs and let it bake uncovered for another 20-30 minutes to solidify the glaze.
  • Brush on another layer of barbecue sauce before serving.
