
I never get tired of making rice krispie treats because they remind me of when I used to have them for breakfast as a kid. Maybe they weren’t the most healthy breakfast, but they were sure delicious. With these ube rice krispie treats, I wanted to combine this childhood favorite with a new-to-me favorite: ube! I have been loving using this ingredient all summer. I love the taste and how it turns food like cookies and these treats a vibrant purple color. This dessert actually would work for Halloween as well!
Ingredients, Substitutions & Adjustments
- Ube extract – This purple extract is what gives the Rice Krispie treats their purple color and ube flavor. You can use a little bit more for more color and flavor or a little less for less of both.
- Rice Krispie cereal – This is what makes this bar a Rice Krispie treat! Rice Krispie cereal has gluten in it, so if you want to make it gluten free, make sure to get the gluten free version. The brand does make it.
- Unsalted butter – Adds a nice nutty flavor to the rice krispie treats.
- Marshmallows – Marshmallows bind the Rice Krispie cereal together. You can use either large or small marshmallows.
Making my ube rice krispie treats
Line a 9×9 baking pan with parchment paper. Set aside. Add the Rice Krispie cereal to a large bowl. Set aside. Melt the butter until golden brown. Add the marshmallows and cook until melted. Add the ube extract and stir until the mixture is a uniform purple color. Pour ube marshmallow mixture over the Rice Krispie cereal. Mix until the cereal is fully coated in the marshmallows. Spoon rice krispie treats into the prepared 9×9 baking dish and press down with a spatula so the rice krispie treats are distributed evenly. Cool for 5 minutes before serving.

- 6 cups Rice Krispie cereal
- 3 tbsp unsalted butter
- 10 oz marshmallows
- 3/4 tsp ube extract
Instructions
- Line a 9×9 baking pan with parchment paper. Set aside.
- Add the Rice Krispie cereal to a large bowl. Set aside.
- Melt the butter until golden brown.
- Add the marshmallows and cook until melted.
- Add the ube extract and stir until the mixture is a uniform purple color.
- Pour ube marshmallow mixture over the Rice Krispie cereal. Mix until the cereal is fully coated in the marshmallows.
- Spoon rice krispie treats into the prepared 9×9 baking dish and press down with a spatula so the rice krispie treats are distributed evenly.
- Cool for 5 minutes before serving.

Hi Barb. I would use a 9×13 inch pan for 2x and I would use a 9×13 inch and a 9×9 inch for 3x.
