Vietnamese Cinnamon Roasted Carrots
A weeknight staple in my household, these Vietnamese cinnamon roasted carrots are the perfect side dish for any occasion. They are incredibly easy to make coming together in under an hour and with very little cooking.

This Vietnamese cinnamon roasted carrots is a dish I make on the regular because it is just so easy to make. It’s one of those side dishes that pair well with almost anything, and it’s also a great fall or holiday recipe. This easy carrot dish is seasoned with salt, pepper, garlic powder, and that secret sauce – cinnamon.

What kind of cinnamon to use
The star of this dish is the cinnamon, and while I do specify Vietnamese cinnamon, you can use whichever kind you can find. However, I encourage you to make the extra effort to get Vietnamese (or Saigon) cinnamon if you can. It has a very distinct flavor that is unlike any other. I’ve tried making this recipe with other kinds of cinnamon, and it’s just not as good.

Different variations and adjustments
This recipe is very versatile and can be made with all different cuts of carrot, so make sure to adjust your cook time for each. Sometimes I thinly slice the carrots into 1/2 inch thick pieces. I like this version because the carrot pieces are more bite-sized. Each piece also gets more of the spice rub. If thinly slicing your carrots, adjust your cook time to 25-30 minutes since they will cook faster.

Vietnamese Cinnamon Roasted Carrots
Ingredients
- 1 tsp salt
- ½ tsp pepper
- ½ tsp garlic powder
- ½ tsp Vietnamese cinnamon
- 1 tbsp olive oil
- 2 lbs carrots

Instructions
- Preheat oven to 450 degrees F (232 degrees C).
- Mix together 1 tsp of salt, ½ tsp of pepper, ½ tsp of garlic powder, and ½ tsp of Vietnamese cinnamon.
- Place 2 lbs of carrots on a baking sheet. Coat with 1 tbsp of olive oil and then the spice mixture.
- Bake for 30-35 minutes until cooked through. The cook time will vary depending on how big your carrots are. Pierce the carrots with a fork to check for doneness.
