During the summer, I am all for a quick treat, and one of the easiest ones to make are Rice Krispie treats. For me, I’m all about the Asian inspired rice krispie treats from black sesame rice krispies to miso rice krispies. Something about Asian flavors pair so well with a classic Rice Krispie treat. That’s why I’m continuing my Asian flavored streak with these Thai Tea Rice Krispie Treats. They’re unbelievably quick and easy to make, coming together in just 15 minutes.

How I developed these Thai Tea Rice Krispies

In the past, I have received feedback that my ratio of cereal to marshmallow was off, so I really wanted to focus on that for this Thai tea rice krispie recipe. I tested this with 6 cups, 5 3/4 cups, 5 1/2 cups, and 5 cups of Rice Krispie cereal and found that 5 cups worked the best. This amount yielded a chewier, gooey-er Rice Krispie treat.

I also tested the amount of Thai tea flavor to make sure it was just the perfect amount. I use a store bought Thai tea mix for all my Thai tea flavored dessert recipes like Thai tea creme brulee and Thai tea ice cream. I tested it with 1 tbsp, 1 1/2 tbsp, and 2 tbsp of Thai tea mix and found that I preferred the 1 1/2 tbsp of tea mix. The other 2 were either too little or too much Thai tea flavor (like Goldilocks and the 3 bears!).

How to make Thai Tea Rice Krispie Treats

  1. Prep a 8×8 baking dish by greasing it with oil and covering it with parchment paper.
    • Tip #1: The parchment paper makes it easier to lift the rice krispies out of the baking dish.
    • Tip #2: You can use a 9×9 baking dish as well.
  2. Pour 5 cups of Rice Krispie cereal into a large bowl.
  3. Break down 1 1/2 tbsp of Thai tea mix into powder.
    • Tip #3: You can either use a spice grinder (what I use) or a mortar and pestle.
  4. Melt 1/4 cup of unsalted butter, and then add 10 oz of marshmallows.
  5. Once the marshmallows are almost completely melted, add the powdered Thai tea mix from step 3 and a pinch of salt. Mix it all together until it’s uniformly orange.
    • Tip #4: Work quickly so the marshmallows and the Thai tea don’t burn.
  6. Pour the Thai tea marshmallows onto the Rice Krispie cereal and mix until the cereal is coated in the melted marshmallows.
  7. Scoop the Rice Krispie cereal into the prepped baking dish and press it down, so it is distributed evenly. Cool for 5 minutes before serving.
